- Heat an griddle or other heavy based pan
over medium head and dry roast the sesame seeds until they are lightly browned, stirring
constantly. Transfer them to a plate and allow to cool.
Heat the oil over medium head and add the mustard seeds. When they begin to pop,
and the garlic and allow it to turn slightly brown.
Add the red chillies, turmeric and coriander, stir briskly and add the beans and
salt. Mix thoroughly, lower heat to minimum setting, cover the pan tightly and cook until
the beans are tender (15-20 minutes), stirring occasionally.
Grind the sesame seeds and the coconut in a coffee grinder and stir into the
beans. Remove the pan from the head.
