Recipe > Quick Carrot Rice

Ingredients
1.5 cup grated carrot
1/2 tsp ginger-garlic paste
1 tsp red chilli powder
1/2 in number onion - chopped fine
2 cups cooked rice
For Seasoning:
1/2 tsp mustard seeds
1/2 tsp cumin (jeera) seeds
1/2 tsp chana dal (bengal gram dal) - optional
1/2 tsp urad dal (black gram dal) - optional
4 in number curry leaves - optional

Carrot Rice

Method

  1. In a pan or wok, heat the oil. Add the seasoning ingredients.

  2. After the dals turn light red, add the chopped onions and ginger-garlic paste.

  3. Saute till the onions are golden brown.

  4. Add the grated carrots and saute for 4 more minutes.

  5. Add the chilli powder, salt and mix thoroughly.

  6. Add the cooked rice, mix thorouglhy and serve hot.
