Recipe > Cheese Pastry

Ingredients
225 gm. curd cheese
100 gm. butter
100 gm. margarine
225 gm. flour
1 tsp. baking powder
For Cheese Filling:
100 gm. cream cheese
1/2 beaten egg
1 tbsp. sugar
Grated lemon rind
Cheese Pastry

Method

Mix the cheese, butter together and rub them into the flour with the baking powder. Refrigerate for a minimum of three hours.
      
Variation: 
For a strudel, roll out and spread with chopped apples, jam, raisins, crushed cornflakes and sugar. Roll up and bake.
      
For individual pastries, cut the pastry into squares measuring about 5cm/2in. Fill with apricot jam, finely chopped apples with raisins, or cheese filling. Fold over to make a triangle or bring the corners together in the middle. Brush with beaten egg and bake at 350F/180C for 30 minutes.
        
Method for cheese filling:
Mix everything together and use as required.
