Recipe > Mushroom Pulav

Ingredients

275g Basmati rice

50g unsalted butter/ghee(clarified butter)

1 tsp caraway seeds

1 large onion

2 cinnamon sticks (2inches)

225g button mushrooms

� tsp ground turmeric

Salt to taste

500 ml water

6 green cardamoms

6 whole cloves

2 bay leaves, crumpled

Method

  1. Wash and soak the rice in cold water for half an hour. Drain the water and keep aside.
  2. In a pan melt ghee/butter over medium heat. Once melted add the caraway seeds and stir for 25 seconds.
  3. Add to this the onions, cinnamon sticks broken up and stir-fry till onions are golden brown.
  4. Add the rice and fry on medium heat. Stir constantly for 5 minutes. Add to this the mushrooms, turmeric, salt and stir and fry for another 3 minutes on low heat.
  5. Add the cardamoms, cloves, bay leaves and water and bring to boil. Keep the lid closed and stir the rice once in a while.
  6. Remove from heat when cooked and allow the steam to escape for a minute or two. Serve hot.
