Recipe > Pineapple Cake

Ingredients

Soft butter - 2 tbsps

Caramelised sugar - 2 tbsps

Salt - a pinch

Pineapple slices - 1 small tin

Powdered sugar - 3/4 cup

Baking powder - 1 tsp

Eggs - 2 separated

Maida - 1 cup

Walnut pieces - few

Cherries for decoration

Pine apple juice from the tin - 1/2 cup (or) milk

Method

  1. Sieve flour with baking powder and salt for three times.
  2. Separate egg yolks form whites carefully.
  3. Apply butter generously in a baking dish and arrange pine apple slices on that.
  4. Pour caramelized sugar, in between the gaps.
  5. Beat egg yolks and sugar.
  6. Add essence and pineapple juice and beat well.
  7. Remove the beater.
  8. With a wooden spoon mix maida to the mixture gently.
  9. Beat egg whites separately till stiff.
  10. Fold this to the cake mixture carefully and pour on arranged pineapple slices, bake at 180 dgree for half an hour or till it is baked.
  11. After baking remove in a serving dish upside down, arrange walnut pieces and cherries on top..
