Recipe > Tendli Bhaji with Cashew Nuts

Tendli (Thonde kaayi) is an Asian Vegetable that looks like a gooseberry and tastes like courgette

Ingredients:

30 ml oil

50 g cashew nuts

3-4 cloves of garlic, peeled and crushed

1/2 tsp mustard seed

6-8 curry leaves

2-3 dry red chilli or fresh green chilli

250 g tendli, washed, dried and cut in half

lengthways

Salt to taste

2 tsps desiccated coconut

1/4 tsp turmeric powder

Method:

  1. Heat oil and fry cashew nuts until light brown. 

  2. Remove, then fry garlic until light brown.

  3. Add mustard seed, curry leaves and red or green chilli. 

  4. Fry for half a minute. 

  5. Add tendli, sprinkle with salt and stir the mixture. 

  6. Sprinkle with desiccated coconut, turmeric and fried cashew nuts. 

  7. Cover and cook on low heat for 10-12 minutes or until tendli is tender.
